Broccoli Soup

Benefits & Notes:  Soups are great way to eat with 0 protein serving. Prepare with clean water.
Chicken broth is here to replace commercial soup preparations.
The butter or ghee is taking the 1 per week allowance of high fat cheese.

Ingredients
  • 4 cups chopped broccoli, flowers and tender stems
  • 3 tablespoons of butter or ghee (clarified butter)
  • 1 red onion, chopped
  • 2 garlic cloves, crushed
  • 4 of cups chicken broth (don’t use commercial soup preparations – out the challenge)
  •  Salt and pepper, to taste
  • (optional and to taste) 1⁄4 teaspoon paprika, cayenne pepper.
  • (optional and adds protein) tofu cubes. Take this amount out of the protein servings.
Directions
  1. In a large soup pot, melt butter, add the onions, and sauté for 5 minutes.
  2. Add the garlic and chicken broth and bring to a boil.
  3. Add broccoli and reduce to simmer for 10 minutes, then remove from heat.
  4. Blend the soup in batches in a food processor, adding the tofu, salt, paprika, and cayenne to taste.
  5. Serve warm.
