Vegetable Soup

Chicken broth is here to replace commercial soup preparations.

Ingredients
  • 1 red onion, chopped
  • 2 garlic cloves, crushed
  • Bell peppers
  • Cauliflower – cut into pieces. Amount varies according to taste.
  • Green beans – sliced evenly. Amount varies according to taste.
  • Salt and pepper, to taste
  • Olive oil
  • (optional and to taste) 1⁄4 teaspoon paprika, cayenne pepper, basil
    rosemary, thyme, parsley, sage, oregano.
  • (Optional and to taste) 3 of cups chicken broth (don’t use commercial soup preparations – out the challenge)
Directions
  1. Saute the onion and bell peppers in olive oil until they are nice and soft.
  2. Add the minced garlic and saute for a minute longer, to let the flavor develop.
  3. Add the rest of the soup ingredients – cauliflower, green beans, salt, pepper, and optional condiments.
  4. Bring the soup to a boil, cover, and simmer for 10 to 20 minutes, until the veggies are soft.
  5. You can drizzle with olive oil according to taste.
