Ricotta Broccoli Pie

Benefits & Notes: This recipe uses your weekly quota of high fat cheese/cream. There is a difference between protein servings in the whole recipe, and the serving you take in a meal. And pay attention to the amount you eat per meal for the protein servings. After the challenge, that wouldn’t be a problem 🙂

Ingredients
  • Broccoli, cut into smaller pieces
  • Ricotta cheese
  • A cup of whipped cream (note it’s your weekly quota of high fat cheese/cream)
  • Grated fat cheese or low fat cream cheese
  • 2-3 eggs
  • Salt and pepper
  • Optional: additional vegetables. Cauliflower, mushrooms, onion.
Directions
  1. Break and mix the eggs in a bowl.
  2. Add the cheese and cream to the mixture, pepper and salt, and mix
  3. Now it’s time to add the cut broccoli piece and vegetables
  4. Mix everything and bake in the oven at 150C (=300 Fahrenheit). 
  5. Bake for 40 minutes
