Ingredients
  • Cauliflower – washed
  • Coconut oil – ½ tablespoons
  • Salt and pepper.
  • (Recommended) Thyme leaves
  • (Optional) chicken broth
  • Needed equipment: food processor and slotted spoon.
Directions
  1. Bring the water to a boil and a large pot and add salt. Use chicken broth if you like to add extra taste.
  2.  Add the cauliflower and boil for about 20 minutes, or until the cauliflower is very tender.
  3. Using a slotted spoon, transfer the cauliflower to a food processor and add 1-2 tablespoons of coconut oil. According to taste.
  4. Process until smooth and creamy, then taste and modify seasoning with salt and pepper.
  5. (Optional) Add the chopped thyme and process until evenly mixed.
