Baked Eggs in Muffins Patterns

Benefits & Notes: Very quick recipe and you can bake a few an reheat before eating.

You can make this with cheese or without it to save protein servings. 

Ingredients
  • Eggs, preferably free range.
  • Low-fat cheese, any kind, hard or soft you wish. Pay attention to the protein servings.
  • (Recommended) sliced mushrooms
  • Optional: vegetables – fried spinach, tomatoes, peppers, onions.
  • Optional: Hot sauces e.g. Tabasco sauce.
  • Salt and pepper
Directions
  1. Preheat oven to 180C degrees .
  2. Cut the ingredients you like (i.e. hard cheese, mushrooms…) into small cubes.
  3. Mix them with cream cheese and pour into muffins.
  4. Over that mixture, break an egg (preferably organic) and sprinkle with salt and pepper to your taste.
  5. Put in the oven for a length of time that depends on how you like your egg. If you like the yolk to be liquid (to preserve the yolk’s nutrients), between 8-10 minutes. If you like it completely done, wait a bit longer, 11-15 minutes.
  6. Serve, add sauce to your liking.
