Baked Eggs in Bell Peppers

Benefits & Notes: Very quick recipe and you can bake a few an reheat before eating.

You can make this with cheese or without it to save protein servings. 

Ingredients
  • 4 Eggs, preferably free range.
  • 2 washed bell peppers  – any color: green/red/yellow/orange
  • Low-fat cheese as you like: cheddar, mozarella.
  • Low-fat cheese, any kind, hard or soft you wish. Pay attention to the protein servings.
  • (Recommended) sliced mushrooms
  • Optional: vegetables – fried spinach, tomatoes, peppers, onions.
  • Optional: Hot sauces e.g. Tabasco sauce.
  • Salt and pepper
Directions
  1. Preheat the oven at 180C / 350F
  2. Slice the bell peppers to two halves.
  3. Add salt & pepper on top
  4. Bake for 15 minutes to straighten the peppers.
    (You can skip this and do the following steps, will work as well.)
  5. Take out the baked peppers but maintain the oven’s heat as we return the tray back soon. Scatter with cheese on the cavity of each of the four pepper halves
  6. Crack one egg on top of each pepper cavity center.
  7. You can add more salt, pepper, and cheese (including a different kind).
  8. Return the tray, and bake for 15-20 minutes until the egg whites have solidified.
