Rocket & Parmesan Salad

Salads are great way to stick to low protein serving.

Ingredients
  • 5 ounces of arugula
  • ¼ cup roughly chopped cilantro
  • ¼ cup shaved Parmesan cheese
  • Handful of nuts (almonds go well here)
  • 1 teaspoon red pepper flakes
  • Select dressings: homemade/recommend pesto / homemade balsamic vinaigrette, olive oil/ lemon.
  • Like any salad, you can add extra olives and avocado to taste. 
Directions
  1. Roast the nuts/almonds in a pan on low-heat until they start to make a sizzling sound, then cool on a plate.
  2. Combine the arugula,  cilantro, nuts, and Parmesan in a salad bowl, toss with dressing.
  3. Salt to taste
