Benefits & Notes: Most commercial pesto sauces don’t fit the challenge, hence the recipe. Alternatively, we suggested recommended commercial pesto in the shopping list.
Ingredients
5-2 cups fresh basil leaves
2-3 (to taste) garlic cloves
1/2 cup (125ml) olive oil
1/2 cup of pine nuts or 1/2 cup of chopped walnuts
2 ounces (50-60 grams of grated Parmesan.
Salt and pepper
Directions
In a food processor, blend together all the ingredients without the olive oil.
When reaching a coarse paste, add gradually the oil into the mixture and pulse mix with the machine (1-2 sec on and stop, add more oil) until reaching a gentle paste texture. Stir in additional salt and pepper to taste.
